Sometimes, when taking advice, we don’t take things one step at a time. Instead we jump right in head first and then find ourselves in a different kind of trouble. Taking something from one extreme to the next is not an improvement. Change is best done at a steady pace. Remember: you didn’t become who you are in one day, so you shouldn’t try to become someone new in one day either. And no, the solution is not to sit on your couch for life ha ha.

Make Your Own Adventure

I am a person who loves to travel, experiencing new things, and try new food. I get excited when something new crosses my radar. Just a few days ago I tried purple squash in a spring roll with mango Habanero sauce. It was delicious.

Then, this past Saturday, I went with a friend to Red Bull Crashed Ice. It was awesome. We were out in the cold and muddy ground (mud in January? What?!?!?!) and drank hot cider as we watched the US go up against other countries.

Sometimes we place such significance on going somewhere big (like Florida or Mexico) when we can easily have an adventure of our own right where you are. I’m not saying you shouldn’t leave your state, because you most certainly should, but when you can’t get away for days at a time or need to save time you can find many things to do right where you are.

But what if you don’t have anyone to go with? No problem, go by yourself. This is another big thing for me. I am always waiting to find someone else to go with me in order to go somewhere. I’ve decided that I am going to let people know when I am going to events and if they want to join me they can and if they don’t I’m still going to go. So should you.

So far I have up the Red Bull Crashed Ice event and look forward to doing much more. And it was seriously awesome cheering on the US. There is something about standing in a crowd, on a cold day, sloshing up mud, and yet cheering loudly that just gives you a sense of camaraderie. Got any cool travels you are doing on our own? Eating Better

One of my resolutions this year is to eat better. I want to cut down all the unhealthy food that I take in (especially after the holidays) and find substitutes that fill me up and satisfy my cravings. The big part of this is cutting gluten down (I eat a LOT of bread, more than I realized) and do very little or no dairy (I’m lactose intolerant so it doesn’t really agree with me). I also want to pack more vegetables into my meals and of course save money!

The big thing to help change my eating habits was to plan out my meals for the week. When I don’t plan my meals, and not just dinner, I would eat whatever was available. Sometimes I would cook, go out to eat, or just eat a bunch of random junk. But I also like to snack and had to find healthy things I can just grab and snack on without feeling guilty about it, usually while I’m eating it.

Now of course there are a lot of “diets” out there that you can try and for every fad there is an article that tells you why it doesn’t work. But ultimately it is up to you and your body needs. So for my “diet fad” I decided to go with Paleo. Mostly because it already offers the big things I’m looking for which is gluten and dairy free.

So far I have found some really awesome places to find recipes (my pinterest if filling up) and discovered new vegetables and ways to eat them. Here are some things I cooked so far, along with my lovely instagram pictures.

Lettuce Wraps

These are quick and easy. Lettuce is an awesome substitute for bread. Basically anything you can put on a cracker or on bread you can put in a lettuce wrap. Okay well… maybe not peanut butter and jelly, but you get the gist. For this a made fresh mango salsa, pan seared salmon, and turkey bacon. Here is a recipe for the mango salad and the wraps.

Stuffed Peppers

Delicious and super healthy and colorful. These were stuffed with Italian sausage, cauliflower rice, basil, red onions, tomato paste, and garlic. I had a bit more fixings than peppers but that was okay because it tasted great. Also the recipe I used calls for a crock pot but I ended up starting late so I just baked it in the oven at 400 degrees for 1:15 minutes. Here is the recipe for this. Note: This would have been a lot easier if I had a food processor to chop up the cauliflower. I really need to get one of those.

Prior to this I had never heard of spaghetti squash before but I found out it is a great substitute for pasta, which is great because I love pasta. This was baked with spinach, cherry tomatoes, red onion, and goat cheese (yes I know, it is dairy but it is more mild and my stomach likes it better). Here is the recipe for this. My only disclaimer was it turned out a little dry for me so I had to add a little oil and vinegar dressing to it.

I already got next week planned out and I am super excited eat it!

 

Costumes Corsets and Conventions

I may have a slight obsession with buying costumes and corsets even if I don’t have many places to wear them. Matter of fact I have so many I have a closet devoted to them. Did I mention I just bought three corsets, a Victorian blouse, and a renaissance chemise?

Yeah I may have a problem.

My other obsession: conventions. You know like comic book, anime, sci fi, and the like. I go partly because I’m a nerd and partly because where else can I wear all my costumes and not have people look at me weird. I used to go to about five conventions a year.

Side tip/confession: if you volunteer or get on staff for a convention you can get a free pass, free food, access to exclusive panels and guests and even a free hotel stay with all of the benefits of a regular convention goer. Of course you have to work shifts but pick an area that interests you and it can be a lot of fun.

These days though I haven’t gone to many conventions but having just gone to the renaissance festival yesterday I think I think I’ll start making them more of a thing again. Next up Halloween, super excited.

Today’s Ride: Existential Thoughts

Currently training for a touring event (marathon of biking) in which I will be doing a 15k. It’s been interesting so far. It’s just me, the wind, and nature. I never listen to music when I bike, mostly because then I can’t hear what is around me and I cross some busy intersections. Also I just like the peacefulness about it. Although no ride is the same and I seem to have existential moments as I’m riding so here is what happened with today’s ride:

1. Maybe I shouldn’t have eaten that peach prior to leaving. Granted I did it because it had been sometime since I’d eaten breakfast but now I might throw up. Great. Just hold it in.

2. Every time I come around the corner I look for deer. Is that weird?

3. If I had a nickel for every time a grasshopper jumped at me or a bug hit me in the face…

4. Was this hill always this hard?!?!?!?!

5. Why do so many other bikers still past me when I feel like I’m going so fast?

6. Nothing like breathing hard and biking when you pass down wind a field of manure. Never have I wanted to breathe and not breathe at the same time so badly.

7. I really should learn how to switch gears and also possibly get a new bike.

8. Did I mention I’m riding a 15-year-old crappy sears bike that keep having to adjust the seat on as it keeps turning. Did I mention it’s pissing me off?!

9. AND now I’ve been whistled at by a stranger from the dark cresses of his white pickup truck…. lovely.

10. Water bottle is covered in dirt. I would wipe it off with my clothes but I’m covered in bug spray. Last time I did that my lips when alarmingly numb. Hmmm what to do? I guess I’m eating dirt. I hope I don’t end up on one of those weird medical shows…

11. Up the hill. Down the hill. Up the hill. Down the hill. Why are there so many hills?

12. I am sooo hungry.

13. Yeah train! I wonder what time this train runs, maybe I can take it sometime? I wonder what it’s like to sit in the upper part? I bet it’s really cool.

14. Was that a deer? My heart might have just stopped.

15. I just got past by a little girl… I just… whatever.

16. Sir if you could not mean mug me while walking your little dog that would be great.

17. OMG is someone frying donuts?

Thirteen miles and finally home.

Light Summer Reading?

So I may have over done it with how many books I have checked out. Not only do I have a plethora of books in my tablet but I also have a plethora of physical books. See I discovered this thing called “Overdrive” where you can check out digital book from a library as long as you have a library card. You can check out as many as ten at a time. Guess how many I have checked out?

Now to be fair it wasn’t like I planned for this. Actually I had put a good amount of books on hold, you know when your like number 24 out of 50, and it just so happens that ALL of them came up at once. Now I have to hurry up and read them before they all expire and then have to go on the holds list again just to read them.

Ahh the trials of a poor bibliophile… so many books so little time.

Friday Fun: Popsicles and Ice Cream

Part of the reason I work out so much, and why many other do, is because dessert is awesome. I always have some form of dessert in my house. However not all of them are created equal so I decided to seek out some that I can make at home and still be a lot healthier. Click on the recipe title to get to the link for the recipes.

Recently I have been a fan of egg nog during the holidays and I had no idea they made a soy version of it. Now I definitely want to try this.

 

 

 

 

 

2. Frozen Fruit Pops

The good old staple. Although sometimes I find it hard to eat it with the big fruit chunks.

 

 

 

 

 

 

 

3. Watermelon & Parsley Ice Pops

This one offers two versions incase you don’t want the parsley. It also calls for simple syrup but I would probably substitute it with something a little healthier.

 

 

 

 

4.Blueberry kale pops

This caught my eye really fast, especially with that whole kale craze.

 

 

 

 

5. Chocolate Covered Peanut Butter Popsicles – Low Carb and Gluten-Free

Not so sure about the cream cheese and heavy cream with in the recipe. May keep it more simple and less fattening. I might substitute greek yogurt for the heavy cream.

 

 

 

 

 

6. Nutella Swirl Cheesecake Ice Cream (Low Carb and Gluten Free)

This one, from the same author actually uses greek yogurt. It also sounds pretty amazing.

 

 

 

 

 

7. Balsamic roasted strawberry and rhubarb sorbet

Now this one is a little intensive for the recipe and of course they want you to use their brand’s sugar for it but you can use whatever you like.

 

 

 

 

8. Mango Vanilla Honey Push Pops

Mango-Vanilla-Honey-Push-up-Pops Not sure where she got her push pop containers (looked everywhere but she didn’t say) however these look and sound amazing. I sure a variation of these can be made for a popsicle instead.

Friday Fun: A Bike Ride

Today for my moment of zen and my weekly fun I went on a long seven mile bike ride. No headphones, just me and the sound of nature. It is one of my favorite things to do. It was a beautiful day outside and even though my tire was a little wonky (discovered it had a flat) I still pressed on and enjoyed every minute of it.

Hopefully you are getting a chance to get outside and enjoy the great weather. Take a break. Take in some fresh air and let it clear you senses.

 

Signs of an Entrepreneur

Entrepreneur recently posted an article “50 Signs You Might Be an Entrepreneur” which of course, always looking for conformation I am on the right path, I had to read. Here are some of my favorites that stood out to me ( I left the corresponding numbers on so you know where they fall on the list). 2. You hate the status quo. You’re a person who is always questioning why people do the things they do. You strive to make things better and are willing to take action on it. (Always.)

10. You were always a lousy employee and probably have been fired a lot. Don’t worry; you’re not alone. I personally have been fired several times in my life. Don’t take it as a sign that you’re a bad person. Sometimes it’s in your DNA. (Seriously though it’s so true).

21. You see opportunities everywhere. For example, you walk into a building and are curious about its worth or the companies inside.

24. You recognize that the best seats at your favorite coffee shops are those closest to power outlets. (Yes and yes even to the point that if there isn’t an open power outlet I might leave).

*side note: not all of those in the article are what I would say are signs of being an Entrepreneur. Gotta take some of it with a grain of salt.
